set view
is what you're looking for. It's static, like all other gnuplot
commands, but it's the only alternative you have. Until someone writes
a 'true' 3D terminal driver for gnuplot, that is.

You definitely cannot influence it from gsview ... it doesn't
even *know* where that ps file is coming from, or that it's a
3D display projected onto its 2D paper, for that.
