There are two gnuplot commands that govern output:

"set terminal" tells gnuplot what kind of output to generate -- Windows
commands, PostScript commands, LaserJet commands, or what have you.

"set output" tells gnuplot what to do with them -- send them to a monitor,
a printer, or a file.

It makes sense to choose a compatable pair -- you can send LaserJet commands
to your monitor if you like, but ...

There are two terminals that may be appropriate for your printer -- "hp500c"
and "hpdj". I've no experience with either one; perhaps the on-line "help"
descriptions will give you some guidance. Likewise "help set output" should
help you actually route the output properly.

Good luck.
