Eitan,

I've been looking for a good Gnome users book myself, and haven't been 
able to find one. The best user documentation I've been able to find is 
here:

    http://www.gnome.org/learn/

This may be too basic for you (sounds like you're fairly advanced), but 
it may be a starting point.
