5.2.11 installs fine on MacOSX 10.11.

This is not needed, just a straight install is fine for 5.2.11.

Since the error message says not able to find  driver:

Stopped - unable to find Gutenprint driver named "HP Laser Jet 2100"

I surmise that your gutenprint install did not work as planned, or CUPS is
not restarted afterwards? It sounds like it could be a mismatch of old and
new PPDs perhaps (more detailed error no doubt in the CUPS debug log if you
activate it).
Can you try uninstalling gutenprint entirely, and reinstalling?
