   OK, thanks.  By observation, the following workaround seems to set the 
   defaults the way I want them:

	    const stp_vars_t *defaults=stp_default_settings();
	    stp_vars_copy(v,defaults);
	    stp_set_printer_defaults(v,the_printer);

   Any objections or potential pitfalls I should be aware of?

No, that's a perfectly reasonable way of doing it.
