Enable the EFI frame buffer and rebuild the kernel. You should probably 
also use the native resolution of your monitor GRUB_GFXMODE. And also 
use "auto" as a fallback. For my 1440p display, I use:

GRUB_GFXMODE=2560x1440x32,auto
