This came up a while ago and I think it has been fixed.  According to 
http://pdb.finkproject.org/pdb/package.php/lilypond, the version you're 
installing isn't in the stable tree, nor is it the latest in unstable 
(you didn't specify whether you had the latter turned on).

I would suspect, therefore, that you are still on the deprecated 10.4 
transitional tree.  Check this via "fink --version".   If so, then you 
should update from that.  Check out
