We have also had success using "JSpeechRecorder" as our recording software - 
see http://www.phonetik.uni-muenchen.de/Bas/software/speechrecorder/ - it is 
available for free download.

This is in Java, so runs on any platform, and it can handle Unicode-formatted 
text. It is especially useful in the case where you want to present the 
written prompts to the recording subject using a slave monitor screen (rather 
than paper).
