Eudora ,for one, will treat a text/plain as text/html if it sees something 
which it recognizes as a html tag in the message. Which confused one user
here  - he was seeing a blank message as what I had sent him was a example of 
using META tags which of course aren't rendered. A bad case of software trying
to be too clever.
