answering myself for the archive;-)

I used this script to build a backport of Dovecot 1.0.0-2 on Etch
and the resulting packages seem stable:

> zcat dovecot_1.0.0-1.diff.gz | patch -p0 -E
> cd dovecot-1.0.0
> chown -R root *
> chmod +x ./debian/rules
