We used to use MediaWiki.

Anyway, be aware of the documentation text format. It's asciidoc [1],  
which AFAIK does not match any wiki format.

I'd personally use the wiki for writing cookbooks, receipts, tricks,  
the FAQ and so on. The experience of keeping the documentation in the  
repository has been quite positive so far.
