I can confirm that we recently upgraded from 1.8.9 to 1.10.1 and there is now
only the "Change" button next to the Default Field label on the bulk edit
screen.

Same thing here.  We upgraded from 1.8.8 to 1.10.1 and only have the 
Change button.  View source shows:

        <dt>Default Field:</dt>
        <dd>

name="container_prof|change_default_field_cb"

        </dd>

Looks like something wants to go into that dd :)
