The 'fwd-data-end' section reflects the elapsed time from the
moment the final dot is sent after transfering the complete
mail contents, and the time a SMTP response is received by
amavisd. During this time amavisd doesn't do anything,
all the delay is generated on the MTA side.

This means the MTA is really busy and takes a horrible
10 seconds to reply and confirm the message reception.

If you have any checks enabled on the smtpd service on
port 10025, these could explain a situation. The usual
culprits would be header of body checks, redundant
DNS/RBL checks, signing milters, etc.  If these times
are high for most messages when the situation occurs,
it could be some general resource problem, like
busy disks, swapping, ...
